<div>&#8220;Chicken breasts slow-cooked in Mexican-inspired salsa and seasonings are great to shred and serve on tacos with your favorite toppings.&#8221;</div>
<p><strong>Ingredients:</strong><br />
1 (16 ounce) jar salsa<br />
1 (1.25 ounce) package dry taco seasoning mix<br />
1 lime, juiced<br />
3 tablespoons chopped fresh cilantro<br />
3 pounds skinless, boneless chicken breast halves</p>
<p><strong>Directions:</strong><br />
1. Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.</p>

<p>Veracruzana is a dish full of onions, jalapeños and tomatoes from the Mexican state of Veracruz. Here we pair the zesty sauce with shrimp, but it can be served with any type of fish or chicken. The heat of fresh jalapeños varies depending on growing conditions. Be sure to taste yours as you&#8217;re adding them to the dish and adjust the amount according to your taste. For pepper flavor without the heat, use a thinly sliced green bell pepper in place of the jalapeños. Serve with: Rice or potatoes and an avocado salad.</p>
<p><strong> 4 servings, about 1 cup each </strong> | <strong>Active Time:</strong> 30 minutes | <strong>Total Time:</strong> 30 minutes</p>
<h3>Ingredients</h3>
<ul>
<li>2 teaspoons canola oil</li>
<li>1 bay leaf</li>
<li>1 medium onion, halved and thinly sliced</li>
<li>2 jalapeño peppers, seeded and very thinly sliced, or to taste</li>
<li>4 cloves garlic, minced</li>
<li>1 pound peeled and deveined raw shrimp, (16-20 per pound; see Shopping Tip)</li>
<li>3 medium tomatoes, diced</li>
<li>1/4 cup thinly sliced pitted green olives</li>
<li>1 lime, cut into 4 wedges</li>
</ul>
<h3>Preparation</h3>
<ol>
<li>Heat oil in a large nonstick skillet over medium heat. Add bay leaf and cook for 1 minute. Add onion, jalapeños and garlic and cook, stirring, until softened, about 3 minutes. Stir in shrimp, cover and cook until pink and just cooked through, 3 to 4 minutes. Stir in tomatoes and olives. Bring to a simmer, reduce heat to medium-low, replace cover and cook until the tomatoes are almost broken down, 2 to 3 minutes more. Remove the bay leaf. Serve with lime wedges.</li>

<li><strong>Shopping Tip:</strong> Shrimp is usually sold by the number needed to make one pound. For example, “21-25 count” means there will be 21 to 25 shrimp in a pound. Size names, such as “large” or “extra large,” are not standardized, so to be sure you&#8217;re getting the size you want, order by the count (or number) per pound. Both wild-caught and farm-raised shrimp can damage the surrounding ecosystems when not managed properly. Fortunately, it is possible to buy shrimp that have been raised or caught with sound environmental practices. Look for fresh or frozen shrimp certified by an independent agency, such as Wild American Shrimp or Marine Stewardship Council. If you can&#8217;t find certified shrimp, choose wild-caught shrimp from North America—it&#8217;s more likely to be sustainably caught.</li>

<p>&#8220;Yummy, creamy coconut milk ice pops have a hint of cinnamon. The hardest part of the recipe is waiting for them to freeze.&#8221;</p>
<p><strong>Ingredients:</strong></p>
<p>1 (12 fluid ounce) can fat-free<br />
evaporated milk<br />
1 (13.5 ounce) can light coconut milk<br />
1/2 cup confectioners&#8217; sugar<br />
2 teaspoons coconut extract<br />
ground cinnamon to taste</p>
<p><strong>Directions:</strong></p>
<p>Whisk together the evaporated milk, coconut milk, confectioners&#8217; sugar, coconut extract, and ground cinnamon. Pour into freezer pop molds, and freeze until solid.</p>

<li>3/4 cup freshly squeezed lemon juice (4 lemons)</li>
<li>3/4 cup good olive oil</li>
<li>2 teaspoons kosher salt</li>
<li>1 teaspoon freshly ground black pepper</li>
<li>1 tablespoon minced fresh thyme leaves (1/2 teaspoon dried)</li>
<li>2 pounds boneless chicken breasts, halved and skin removed</li>
</ul>
<h2>Directions</h2>

<p>Whisk together the lemon juice, olive oil, salt, pepper, and thyme. Pour over the chicken breasts in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.</p>
<p>Heat a charcoal grill and cook the chicken breasts for 10 minutes on each side, until just cooked through. Cool slightly and cut diagonally in 1/2-inch-thick slices.</p>
<p>Skewer with wooden sticks.</p>

It is calculated using a child&#8217;s weight and height. BMI does not measure body fat directly, but it is a reasonable indicator of body fatness for most children and teens.</p>
<p>A child&#8217;s weight status is determined using an age- and sex-specific percentile for BMI rather than the BMI categories used for adults because children&#8217;s body composition varies as they age and varies between boys and girls.</p>
<p><a href="http://www.cdc.gov/growthcharts/cdc_charts.htm">CDC Growth Charts</a> are used to determine the corresponding BMI-for-age and sex percentile. For children and adolescents (aged 2—19 years):</p>
<ul>
<li><strong>Overweight </strong>is defined as a BMI at or above the 85th percentile and lower than the 95th percentile for children of the same age and sex.<sup>1</sup></li>
<li><strong>Obesity</strong> is defined as a BMI at or above the 95th percentile for children of the same age and sex.<sup>1</sup></li>

<h2>What are the consequences of childhood obesity?</h2>
<h3>Health risks now</h3>
<ul>
<li>Childhood obesity can have a harmful effect on the body in a variety of ways. Obese children are more likely to have–</li>
<ul>
<li>High blood pressure and high cholesterol, which are risk factors for cardiovascular disease (CVD). In one study, 70% of obese children had at least one CVD risk factor, and 39% had two or more.<sup>2</sup></li>
<li>Increased risk of impaired glucose tolerance, insulin resistance and type 2 diabetes.<sup>3</sup></li>
